My watermelon margaritas are a favorite, especially in the hot summer season. They are easy to make and require no extra sugar as the watermelon sweetens it naturally.
But you have to do a little advance planning, since the watermelon needs time to freeze. What I find works well for me is to keep a bag or two of the frozen cubes in the freezer. Then they are always ready. Seedless watermelon is the easiest, but if you get the regular kind, be sure to get the seeds out before freezing. Once I have the watermelon about the size of large ice cubes, I spread them out on a baking sheet and freeze individually. This is important as well, since you don’t want a large blob of watermelon, but cubes that can separate and pulverize in your blender.
Recipe for Renee’s Watermelon Margaritas
4 cups of seedless watermelon, cubed and frozen
1/2 cup lime juice
1/2 cup tequila
1/2 cup triple second or your favorite orange liqueur
Lime wedge
Salt
Run lime wedge over the rim of the glasses you wish to use, then dip in a dish of salt. Set aside.
Put frozen watermelon cubes in blender, then add juice, tequila, and triple second. Blend until creamy and thick. Pour – or spoon – into prepared glasses.
Makes four drinks.
You can use colored sugar to rim the glasses instead of salt. Blue would work well for your Fourth of July celebration. Enjoy!
