While we were away, our garden thrived.
And thrived!
It is a small little patch of herbs and a very few vegetables. But the peppers, tomatoes, and basil are extremely happy. And if the tomatoes and basil are doing well, so am I.
But what could I make with my leftover barbecue chicken and these ingredients?
I decided to make a pizza. I like to make my own crust, but you can use whatever you normally do when you make pizza. Then I made pesto out of the basil, adding lemon juice, garlic, and olive oil to the blender until smooth. I left out the nuts and the cheese. I wanted it to be smooth and easy to spread over the tender crust. Then I used the parmesan cheese I would normally put in the pesto over it, topped that with chunks of chicken, followed by mozzarella, fresh tomato slices, salt and pepper, and bacon bits. Then I baked it at 450 degrees Fahrenheit for about eighteen minutes.
The result?
A wonderfully original pizza that my
family adored.
